For the food that I would eat strictly for 1 week straight it would either have to be pasta or sushi.
As for which food I would eliminate from existence, there are a few specific foods I will not eat. I could do something like peanut butter, but I feel that would be too cruel to most people

Very kind of you to think of others when it comes to peanut butter, but I'm allergic so I'd hop on this train. I almost died eating a mini Reese's peanut butter cup as a child. It was so tasty! I'm salty! The combination of chocolate and pb seem op.
Food for everyday: If I can eat mcdonald's fries everyday without health repercussions, I would.
Food to ban: mushrooms
Lmao pasta and sushis are food. If I had to pick one for each it would be Parma Rosa pasta and for sushi I would probably pick a Rainbow Roll just because a rainbow roll consists of many different fish so I get my variety that way. 
Understandable on eliminating peanut butter, peanut allegies suck. Your food choices make sense, I can see both of those.
Everyday: Thai food in general (drunken noodle), sushi, cheese, chicken…I’m not picky.
Eliminate: Tomatoes (raw), avocado, chick peas/hummus, sour cream, and basic ranch.
Good choices on the every day option, sadly most of your eliminate choices make me sad.
